RUSTIC CHERRY BERRY GALETTE
Being a Midwest girl, I have always loved pie.
Pie is basically a requirement at every holiday in my family. My Grams always made them, and yes, they really did line up in a row at Thanksgiving because there were a lot of mouths to feed.
I still do the same thing, even when there aren’t nearly as many people around the table.
But what if we made the whole process just a little simpler?
The perfectly imperfect pie
A galette is a free-form, open-faced pie — a buttery pastry and fruit filling without the perfectly crimped edges.
There’s something about a galette that feels both rustic and elevated at the same time. Like something you’d spot in the window of a European pastry shop. Then order immediately along with an espresso.
You can make one large enough for everyone to share or make individual galettes.
Cherries for summer
For the Fourth of July, I always think of cherry pie.
Cherries are beautiful this time of year, so instead of making a traditional pie, I wanted to make a rustic galette.
I added blackberries and blueberries to the cherries, tucked everything inside a buttery pastry crust and let the fruit bake until bubbly and golden brown.
The vibe is very Europe meets Americana — a rustic pastry filled with red and blue summer berries that just happens to be perfect for the Fourth.
So many more Galettes to be baked in my future with seasonal flavors.
Apple? Obviously. Pecan?
Pumpkin with caramel drizzle? Done.
Savory? Maybe a ham, egg and Swiss for a holiday brunch?
How I like to serve it
This one is best served warm with a very generous scoop of vanilla ice cream.
And if there happens to be leftovers? Do yourself a huge favor the next morning, warm it up and eat it with your coffee.
Store leftovers wrapped and refrigerated. When you’re ready for another piece, I like to warm it briefly in a 300°F oven until the pastry is warm and the filling has softened. Remember every oven is a little different, so start with just a few minutes and heat it to your preference.
The thing I love most about a galette is that it’s one of the easiest desserts to make. Add it to any dinner table and somehow it looks like you stopped at a little European pastry shop on the way over.
Rustic Cherry Berry Galette
Ingredients
- 2 cups cherries pitted and roughly chopped
- 1 cup blueberries
- 1/2 cup blackberries
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon almond extract
- 1 unbaked pie crust
- 1 egg, beaten, for egg wash
Instructions
- In a large bowl, gently toss the cherries, blueberries, and blackberries with the sugar and cornstarch. Add the almond extract and stir gently to combine. Let the mixture sit for about 5 minutes.
- Roll the unbaked pie dough into a large round and transfer it to a parchment-lined baking sheet.
- Before adding the fruit to the crust, drain off some of the excess juice that has collected in the bottom of the bowl.
- Spoon the fruit mixture into the center of the dough, leaving a border around the edges. Fold the exposed dough up and over the fruit, working your way around the galette to create a rustic crust.
- Brush the exposed crust lightly with the egg wash.
- Bake at 425°F until the fruit is bubbling and the crust is deeply golden brown.
- Let the galette cool slightly before slicing and serving.
